# Directions:
01 - Place grated pumpkin in a clean kitchen towel and squeeze out excess moisture.
02 - In a large bowl, thoroughly mix pumpkin, onion, garlic, breadcrumbs, Parmesan, egg, cumin, smoked paprika, nutmeg, salt, and pepper until the mixture is cohesive.
03 - Form the mixture into small nuggets, each using approximately 1 tablespoon of filling.
04 - Roll each nugget in panko breadcrumbs for an even coating.
05 - Pour enough vegetable oil into a large skillet to achieve a 1/2 inch depth, then heat over medium-high setting.
06 - Working in batches, fry the nuggets, turning occasionally, until golden and crisp, about 3 to 4 minutes on each side.
07 - Remove nuggets with a slotted spoon, drain briefly on paper towels, and serve warm.
