05 - 1 small parsnip, peeled and cut into 4-inch sticks

→ Marinade

06 - 2 tablespoons olive oil
07 - 1 teaspoon balsamic vinegar
08 - 1/2 teaspoon dried thyme
09 - 1/2 teaspoon dried rosemary
10 - 1/2 teaspoon sea salt
11 - 1/4 teaspoon black pepper

→ Garnish

12 - 2 tablespoons crumbled feta cheese (optional)
13 - 1 tablespoon chopped fresh parsley

# Directions:

01 - Set oven to 400°F and line a baking sheet with parchment paper.
02 - In a large bowl, whisk together olive oil, balsamic vinegar, thyme, rosemary, sea salt, and black pepper.
03 - Add carrot, red and yellow bell peppers, zucchini, and parsnip sticks to the marinade and toss until evenly coated.
04 - Place the vegetable sticks on the prepared baking sheet in parallel pairs, alternating colors to resemble sleigh rails.
05 - Bake for 20 to 25 minutes, turning once halfway through, until vegetables are tender and lightly caramelized.
06 - Transfer to a serving platter, sprinkle with crumbled feta (if using) and fresh parsley. Serve warm or at room temperature.
