# Directions:
01 - In a medium mixing bowl, combine diced mango, sliced green onions, chopped jalapeño (if using), and chopped cilantro. Season lightly with salt and black pepper and mix gently.
02 - Arrange the flour tortillas on a flat surface. Scatter half of the Monterey Jack and cheddar cheese evenly over one half of each tortilla.
03 - Distribute the mango filling evenly over the cheese layer on each tortilla. Top with remaining cheese. Fold each tortilla in half to create a semicircle.
04 - Melt 1/2 tablespoon unsalted butter in a large skillet over medium heat. Cook one or two folded tortillas at a time for 2 to 3 minutes per side, or until the exterior is golden brown and the cheese fully melted. Repeat with remaining butter and quesadillas.
05 - Transfer the quesadillas to a cutting board. Allow to cool for 1 minute, then cut each into 3 triangles using a sharp knife. Garnish with additional cilantro if desired and serve warm.
